Vegetable Kuruma


Ingredients
Potato,cauliflower,green beans,carrot-2cups
Onion-1
Tomato-1
Cumin-1/4tablespoon
Fennel-1/4tablespoon
Chilli powder-1tablespoon
Corriander powder-2tablespoon
Pepper powder-1/4tablespoon
Coconut paste-1/2cup
Oil-3tablespoon
Salt-as required

For Grinding
Garlic-3pods
Cashew nuts-6
Coconut-2tablespoon
Onion-1/4 or Pearl onion-6
Corriander leaves-few
Green chilli-2

Method
  • Grind all the ingredients into fine paste.
  • Slice onion,chop the vegetables into cubes.
  • Boil the vegetables until half done.
  • Boil and peel the skin of tomato and make it into puree.(2 to 3tablespoon of tomato paste can be used instead)
  • Heat oil in kadai,addcumin,fennel,when starts popping,add onion.
  • When onion gets transparent,add grounded paste,chilli powder,corriander powder,pepper powder,salt.
  • Cook until the raw smell goes off.
  • Add the boiled veggies,tomato paste and cook until it is fully done.
  • Add coconut milk and cook until oil seperates from gravy.
  • Garnish with corriander leaves.
