Vegetable Biriyani

Ingredients
Basmati Rice-1cup
Mixed vegetables-1 cup
(carrot,beans,potato,cauliflower,green peas)
Bay leaves-2
Onion-1
Tomato-1
Green chillies-5 or 6
Ginger Garlic paste-1/2tablespoon
Mint leaves-1/2 bunch
Chilli powder-1/2tablespoon
Biryani powder (Any brand)-1/2 tablespoon
Yogurt-4tablespoon
Lemon-1/2
Coconut milk -1/2 cup
Salt-as required

For Grinding
Cinnamon-2 sticks
Cloves-2 no
Cardamon-2
Shajeera-1/4tablespoon

Method
  • Soak rice for 30minutes in water.
  • Fry the rice till it become seperate,keep it aside.
  • Heat oil, ghee, add the grinded paste,when the raw smell goes off.
  • Add onion, fry until it turns brown,add ginger garlic paste, green chillies,tomato and salt. cook for 5 mins.
  • Add corriander leaves, pudina leaves, chilli powder, biryani powder and vegetables cook until vegetables become soft.
  • In a rice cooker,add rice,1/2 cup water, 1/2 cup coconut milk, 1tablespoon ghee, sauted gravy, lime juice.
  • Garnish with corriander leaves.
