Stuffed Kathirikai(Brinjal curry)


Ingredients
Brinjal-5
Onion-1
Mustard-1/4 tablespoon
Tomato-1
Curry leaves -few

For Grinding
Channa dhal-1 tablespoon
Urad dhal-1 tablespoon
Black pepper-1/4tablespoon
Red chilli-10
Coconut Gratings-2tablespoon
Cumin-1 tablespoon
Corriander powder-1/4tablespoon
Cinnamon-1 stick
Cloves-3
Peanuts-2tablespoon
Tamarind paste-1/2tablespoon

Method
  • Roast all the ingredients for grinding without oil.
  • Grind the ingredients with tamarind paste and water.
  • Make deep slits in brinjal,and stuff the grinded paste in between the slits in brinjal.

  • In a kadai,add oil,mustard.
  • When it starts popping,add onion,curry leaves.
  • When onion gets transparent,add tomato.
  • When tomatoes gets mushy,add stuffed brinjal and grinded paste,water,salt.
  • Stir the mix ocassionally.
  • Cook until the gravy gets thicker.
  • Garnish with corriander leaves.
