Kathirikai Kulambu(Brinjal curry)


Ingredients
Brinjal– 8
Tamarind - a small lemon size
Turmeric powder -1/2 tablespoon
Mustard- 1/4 tablespoon
Cumin-1/4tablespoon
Onion-1/2
curry leaves- a few 
Sambar Powder – 1tablespoon
Oil – 3tablespoon 
Salt –as required

For Grinding
Toor dhal- 3 tablespoon
Channa dal- 1/4 tablespoon
Urad dhal- 1/2 tablespoon
Fenugreek- 1/2 tablespoon
Red Chillies – 3
Hing-a pinch 

Method
  • Make slits in  brinjal along the four sides.
  • Grind the dhals,fenugreek,redchillies,hing into coarse paste.
  • Stuff the grounded paste in between the slit in brinjal.
  • Take 1cup of tamarind juice.
  • Heat oil in kadai,add mustard,cumin when starts popping,add onion,curry leaves.
  • When onion gets transparent,add stuffed brinjals,turmeric,sambar powder,fry until the raw smell goes off.
  • When brinjals are half cooked add the tamarind juice.
  • Cook until brinjals are fully done.
  • Garnish with corriander leaves.
