Vegetable Vellai/White Kuruma

Ingredients
Onion-1
Mixed Vegetables(Carrot,Beans,Cauliflower,Peas,Potato)-2cups
Cumin-1/2 tablespoon
Fennel-1/2 tablespoon
Bay Leaf-1
Ginger garlic paste-1 tablespoon
Curry leaves-few
Coriander powder-2tablespoon
Curd-2 tablespoon
Milk-1/4cup(optional)
Coriander leaves-fe
Oil/Ghee-2 tablespoon
Salt-as required

For Grinding
Green chili-3
Coconut-5tablespoon
Poppy seeds-2 tablespoon
Roasted Channa dhal-2 tablespoon
Cinnamon-1
Cloves-2
Cardamom-1
Cashew-5


Method
  • Grind all the ingredients to be grounded into fine paste.
  • Chop onion, coriander leaves finely.
  • Heat Ghee/Oil,add bay leaf,cumin,fennel,when it splutters,add onion,curry leaves.
  • When onion turns transparent,add the mixed vegetables, coriander powder and sauté well.
  • When the raw smell goes off,add 1/2 cup water and salt.
  • When the vegetables are cooked,add the grounded paste,curd,milk and boil for another 5mins.
  • Garnish with coriander leaves.
  • Serve hot with chappathi,puri,variety rice.
